Learning to Cook 101

If you’ve ever had the sheepish urge to stand up in a room full of strangers, state your name and admit that you don’t really know how to scramble an egg, consider chef Julia Helton to be your sponsor in a culinary 12-step program designed to get you back on track in the kitchen. Helton, who heads up the catering side of Mitchell Delicatessen in Riverside Village (1402 McGavock Pike), will launch a series of cooking classes Aug. 18. Held every other Monday at 7:30 p.m., the classes will start out with the basics and progress to more involved techniques and recipes.
In lesson No. 1, Helton will run through a list of kitchen essentials (knives, cutting board, fire extinguisher and a healthy dose of attitude). Then she’ll teach you how to cook eggs, a task that sounds easy but can be intimidating to the novice chef. After a quick curriculum in boiling and scrambling, Helton says, “You’ll think, ‘This is so f&*%ing easy, I can’t believe I haven’t been eating eggs like this the whole time.’ ”
